- Shaoxing wine
- cornstarch

👨🍳 Step-by-step instructions

Marinate the beef for 15 minutes with soy sauce, cornstarch, and Shaoxing wine.

Prepare the sauce: mix oyster sauce, soy sauce, water, and cornstarch.

Heat the wok until it smokes. Cook the beef in separate pieces for 1 minute. Reserve.

In the same wok with more oil, stir-fry garlic and ginger. Add the vegetables in order (carrots, broccoli, bell peppers).

Return the meat, add the sauce, and mix for 1 minute. A few drops of sesame oil at the end.
💡 Chef's tip
The fire must be as high as possible so the vegetables sear without cooking. If you have an induction cooktop, preheat the empty wok for 3 minutes.
📝 Our take
High-fire wok is the invisible cook of this recipe. Without that extreme heat (what the Chinese call wok hei, the breath of the wok) the vegetables cook instead of searing and the result is completely different. The beef must be cut very finely and marinated in bicarbonate to be tender. The oyster and soy sauce in equal proportions is the umami secret.
🍷 Wine & food pairing
Cold Chinese lager beer (Tsingtao or similar). A very aromatic white wine like an Alsatian Gewürztraminer also works, which can withstand the potent flavors of soy sauce.
