🛒 Ingredients
- 400g bomba rice
- 300g chicken in chunks
- 200g rabbit in chunks
- 200g flat green beans
- 100g garrofón (large white bean)
- 4 tablespoons olive oil
- 1 tablespoon sweet paprika
- 2 ripe tomatoes grated
- Saffron threads
- 1 sprig rosemary
- Water or broth
- Salt
👨🍳 Step-by-step instructions
-
Soak the rice for 10 minutes. Prepare the hot chicken broth.
-
In the paellera, heat olive oil and brown the chicken and rabbit chunks until golden.
-
Add the chopped bell peppers and sauté for 3 minutes. Add the grated tomato and sauté until reduced.
-
Add the green beans and garrofón. Stir and add the sweet paprika, stirring for 30 seconds.
-
Pour in the hot broth (twice the amount of rice). Add the toasted saffron. Season with salt.
-
When it boils, add the rice, distributing it evenly. Cook over high heat for 8 minutes.
-
Reduce the heat and cook for 10 minutes more without stirring. In the last 2 minutes, increase the heat for the socarrat.
-
Turn off the heat and let rest for 5 minutes, covered with newspaper, before serving.
💡 Chef's tip
Use Valencian Senia or Bomba rice and never stir it once the broth is added. Paella cooks on its own.
📝 Our take
Valencian paella is the most falsified Spanish recipe in the world, which makes the authentic one surprise when you try it. The secret lies in the socarrat: that layer of toasted rice at the bottom that smells like burnt saffron. Without socarrat, there's no paella, just rice with things.
🍷 Wine & food pairing
A dry white wine from the Valencia DO or a cold beer. No red wine: it kills the nuances of the seafood and saffron.
Suggested wine: Verdejo from Rueda or white wine from the Valencia DO
