🛒 Ingredients

4 servings
  • 600 g peeled and diced pumpkin
  • 1 onion
  • 2 garlic cloves
  • 2 cm fresh ginger
  • 200 ml coconut milk
  • 500 ml vegetable broth
  • Oil, salt, nutmeg
  • Pumpkin seeds for garnish

👨‍🍳 Step-by-step instructions

  1. Place the onion, garlic and ginger in the Thermomix. Chop 5 seconds speed 5.

  2. Sauté 5 minutes, 120°C, speed 1.

  3. Add pumpkin, broth and salt. Cook 20 minutes, 100°C, speed 1.

  4. Add the coconut milk. Blend 1 minute speed 10 progressive.

  5. Adjust salt and consistency.

  6. Serve with toasted pumpkin seeds and a drizzle of olive oil.

💡 Chef's tip

Add the coconut milk at the end (off the heat or with the machine turned off) to keep its fresh flavor and prevent it from reducing.

📝 Our take

Pumpkin soup in the Thermomix is the ultimate proof that the appliance makes sense. Twenty‑five minutes, one bowl, no stovetop mess and no watching. Adding ginger and coconut milk at the end turns a simple vegetable purée into something with far more depth.

🍷 Wine & food pairing

Basque sparkling cider or a German semi-dry Riesling Spätlese. The wine’s sweetness complements the pumpkin and balances the ginger.

Suggested wine: German Riesling Spätlese or Basque sparkling cider
