Churros with thick hot chocolate are Spain's most beloved breakfast treat. The dough is fried until the outside is crisp and lightly golden, then dipped into a rich, thick drinking chocolate made with cocoa, milk and cornstarch. A true winter ritual, especially popular at Christmas, Carnival and late-night celebrations.

  • 250ml of water
  • 200g of all-purpose flour
  • A pinch of salt
  • Frying oil
  • 200g of dark chocolate
  • 500ml of milk
  • 2 tablespoons of cornstarch
  • Sugar to taste

👨‍🍳 Step-by-step instructions

  1. Bring salted water to a boil. Add flour all at once and stir until the dough comes away from the sides.

  2. Let cool slightly and pipe through a star tip pastry bag.

  3. Fry in abundant oil at 180°C until golden brown.

  4. Drain and coat with sugar and cinnamon.

  5. Chocolate: dissolve cornstarch in cold milk. Heat with chocolate until thickened.

💡 Chef's tip

The dough for fried dough sticks doesn't contain yeast. If they turn out soft, the oil wasn't at 180°C.

📝 Our take

Churros are not complicated, but there are a few rules. The dough uses no yeast — if they come out soft, the oil was not hot enough. The chocolate here is thick enough to coat a spoon and hold its shape in the cup: closer to a hot ganache than a drink.

🍷 Wine & food pairing

Strong café con leche or a short espresso. The sweetness of the churros calls for a bitter coffee to balance it. A double espresso works well outside Spain.
