🛒 Ingredients
- 200g 70% dark chocolate
- 125g butter
- 200g sugar
- 3 eggs
- 100g plain flour
- 100g chopped walnuts
- 1 pinch salt
👨🍳 Step-by-step instructions
-
Preheat oven to 175°C. Grease and flour a 20x20cm square tin.
-
Melt the dark chocolate (70%) with butter in a bain-marie or in the microwave in short bursts.
-
Add sugar to the melted chocolate and mix well. Incorporate the eggs one by one, beating between each.
-
Add vanilla extract and sift in the flour with the salt. Fold in gently with a spatula.
-
Add the chopped walnuts and fold in. Pour the batter into the prepared tin.
-
Bake for 22–25 minutes. The centre should be slightly moist when tested with a skewer.
-
Leave to cool completely in the tin before turning out and cutting into squares.
💡 Chef's tip
Toast the walnuts in a dry pan for 2–3 minutes before adding them. The flavour intensifies noticeably and it is worth the extra 3 minutes.
📝 Our take
Walnut brownie has one advantage over the plain version: the crunch of the nuts contrasts with the fudgy interior and makes every bite more interesting. 70% dark chocolate is non-negotiable for real depth of flavour.
🍷 Wine & food pairing
Espresso or strong black coffee. With vanilla ice cream if served warm, or a cold glass of milk for an afternoon snack.
