- 500g mascarpone
- 4 egg yolks
- 4 egg whites
- 100g sugar
- 200g ladyfingers (savoiardi)
- 300ml cold espresso
- 5 tbsp amaretto (optional)
- Cocoa powder
👨🍳 Step-by-step instructions

Separate the egg yolks from the egg whites. Beat the egg yolks with sugar until a pale cream is obtained.

Add the mascarpone to the egg yolks and mix gently until integrated.

Whip the egg whites until stiff peaks form with a pinch of salt.

Incorporate the whipped egg whites into the mascarpone cream with enveloping movements.

Prepare strong espresso and let it cool. Add amaretto or rum if used.

Briefly dip the ladyfingers in the coffee (do not soak) and place at the bottom of the mold.

Cover with half of the cream. Repeat the layer of ladyfingers and cream.

Refrigerate for at least 4 hours (preferably overnight). Sprinkle with cocoa powder before serving.
💡 Chef's tip
Mascarpone at room temperature incorporates much better into the egg yolks without creating lumps. The espresso must be completely cold before dipping the ladyfingers: with hot coffee, they fall apart instead of soaking.
📝 Our take
Authentic tiramisu does not include whipped cream. The original Venetian recipe uses only mascarpone, egg yolks, and whipped egg whites: that's the airy yet dense texture that makes it unmistakable. The espresso must be strong, almost bitter, and Amaretto or Marsala are optional but greatly enhance the dessert. With ladyfingers, not with cake.
