- 2 salmon fillets (200g each)
- 2 tbsp white miso
- 1 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp mirin
- 1 tsp freshly grated ginger
- 1 tsp toasted sesame seeds

Mix the miso, honey, soy sauce, mirin and ginger.

Generously brush the salmon fillets with the mixture.

Marinate for 30 minutes (ideal but not mandatory).

Preheat air fryer to 200°C.

Cook for 10 minutes for 2-3 cm thick pieces.

Sprinkle with toasted sesame seeds and serve with steamed rice.
💡 Chef's tip
Do not go over time — salmon keeps cooking with residual heat. Better to take it out when the centre still looks slightly underdone. Miso burns easily, so do not use the grill function if your air fryer has one.
📝 Our take
The miso-mirin combination on salmon is one of the most effective marinades there is: miso contributes deep umami, mirin adds caramelised sweetness, and salmon has enough fat to carry both. In the air fryer the result is a slightly lacquered exterior with a still-juicy interior. Five minutes of marinating minimum, twenty is better.
🍷 Wine & food pairing
Cold sake, especially a junmai, or a Japanese lager like Asahi. For wine drinkers, an Alsatian Pinot Gris has the body and slight sweetness that works with miso.
