Mash the avocado in a molcajete or with a fork: not in a blender, it should retain chunks.

Add the finely chopped onion and chile.

Stir in the tomato diced into small cubes (drain excess liquid).

Squeeze the limes. Add the chopped cilantro.

To prevent oxidation: keep the avocado pit inside and cover with plastic wrap in contact.

Guacamole should have texture: not a cream. Add the lime at the end to avoid excessive oxidation.

Real guacamole uses ripe avocado, serrano chile, cilantro, onion and lime. No mayonnaise, no sour cream, no canned tomato. The texture should be rustic — slightly mashed, not pureed — and it must be eaten right away. Guacamole doesn’t wait.
